Sourced from 2.2 acres of Gamay vines planted in 2003
in iron-rich, volcanic clay soils, the 2018 Seven Springs
Gamay Noir is the most developed and complex
expression of the variety we have produced to date.
The historically dry 2018 vintage realized a concentration
of flavor in the fruit through both a lack of winter rain and
ground moisture. Combined with an exceptional and even
growing season, the resulting wine possesses both the
exuberant fruit and underlying earth and spice that is so
alluring in Gamay.
The fruit was fermented in a sealed concrete tank for 10
days before being drained and pressed. The wine was
raised in our oldest barrels for 15 months and bottles without filtration.
