A blend of Grenache, Mourvedre and Pinot Noir. It shows a soft, round mouth feel with the perfect amount of bubbles. It would be good as a starter or as an apertif as well as a compliment to fish or light white meats.
The main feature of this cava is its powerful color with lively and sparkling nuance. With more than 15 months of ageing, the nose is powerfully strong, with hints of red fruits and a powerful meaty background of gumdrops and red licorice. In mouth it displays strength, freshness and a light sickly-sweet touch, a quite lively yet elegant and highly refreshing acidity, as well as a potent red fruit bouquet and a fairly consistent finish.
Complete control over quality presides over the first phase of our productions. The choice, coupage and refining of the wine that will provide the base to our house cavas are extremely carefully done. Every detail counts.
Once the base wine is stabilized, the traditional method begins. To the base wine we add the amount of sugar necessary to produce a secondary fermentation in the bottle, along with the yeast that makes it possible and a clarifying agent that helps the clarification during the riddling process. The whole mixture is then bottled in cava bottles and tightly sealed. The bottles are taken to the ageing cellars where they will remain for a long period of time.
The sugar added during the tirage phase is fermented by the yeast, as a result we obtain the bubbles.
