Grapes: 48% Macabeu, 33% Parellada, 19% Xarel-lo the vintage-dated 2016 Brut Reserva was disgorged in January of 2019, having spent three years on the lees. The resulting wine is an excellent example of what Cava can be.
The nose is clean and fruity with hints of apple, caramel and fresh herbs. The palate is elegant and balanced with well-integrated bubbles and excellent balance. Four grams dosage, 5.9 acidity and only 11.5% alcohol. Yum!
Food pairing: At any time. Ideal as an aperitif. Goes well with fish, seafood cream soup, white meat, goat cheese and desserts.

Cava (Spanish pronunciation: [ˈkaβa], plural Cavas) is a Sparkling wine of Denominación de Origen (Designation of Origin) status from Spain, made using the traditional method (as a champagne). It comes in white (blanco) or rosé (rosado), and the main grape varieties used are Macabeo, Parellada and Xarel·lo.
Champagne-style sparklers (like Cava) undergo a very unique production process. To get the bubbles in the wine, a secondary fermentation happens inside a sealed bottle. As a by-product, dissolved CO2 (i.e. carbonation) is trapped in the wine. While bubble development only takes a few weeks, the process has only just begun!
