THE LOST CHAPTERS wines are produced in limited quantities originating from an outstanding vineyard or vineyard block. Each barrel is selected by winemakers Paul Scotto and Mitch Cosentino as they evaluate the harvest and discover small lots that exhibit excellence and individual character, regardless of vintage, varietal or appellation.
The long-heralded Pinot Noir capitol of Carneros was the source for our first release of The Lost Chapters.
The hand harvested fruit was fermented using W15 yeast and a punched cap, followed by 18 months of French oak barrel aging including 25% new oak. The medium ruby color borders on light raspberry and hints at the elegance that follows. Ripe cherries with a note of spice and tobacco on the nose lead to a lush palate with balanced acidity and restrained tannins. Flavors of red cherries and raspberries linger through a long lasting, layered finish.
Traditional Pinot Noir companions including grilled and baked salmon and lamb are ideal dinner table partners.
