A thoughtful blend of two Chardonnay blocks at Tidalastar Vineyard with one block delivering nuanced aromatics and a pleasing generosity to the wine, while the other produces more steely juice, packed with tension and lemon-lime flavors. We conduct gentle, whole bunch pressing and cool-settle the juice overnight, before feeding into oak vessels, and some stainless steel for fermentation. Once sulfured, the vessels are topped and we age the wine on lees over a period of about 12 months, before blending trials begin.
Lively aromas of Granny Smith apple, pear and meringue introduce subtler notes of wet concrete, sage and rosemary on the nose. Entry on the palate is brisk and juicy with lots of zest. A strong presence on the mid-palate brings flavors of apple and grapefruit with lingering notes of peach, white pepper and almond. The finish is crisp and clean.
