Saint Genes de Lombaud, the heart of the entre deux Mers region. The soil is siliceous, clay, and pebbles. Limited use of pesticides.
Mechanical Harvest, followed by hand selection of fruit.
Maceration on skins at low temperatures, mechanical pneumatic pressing. In Stainless for 20 days at 64 degrees.
Matures on lees until bottling. Stirring of lees 2 times a week for 2 months.
